The new bistrot open a few days ago in via Washington 56 in Milan from Milan is dedicated to her mother Edoardo Borgiaentrepreneur already owner of the Fine Dining Borgia restaurant, of which he shares address and spaces. Anna by Borgia Milano is a bistrot which tells a story of family, memory and shared cuisine, with a simple and dialoguing proposal but equally attentive to the quality, hospitality and beauty of eating well, always signed by the chef Giacomo Lovato del Borgia.
Anna The true inspiring of the family passion for hospitality is considered by Edoardo. It was she, in that same space, in the early 2000s, that opened the Emporium Island Café, inside the historic clothing outlet founded by her husband Ennio Borgia. A place that has left its mark in the neighborhood, becoming part of the urban and emotional fabric of the area. Today Anna marks a return to the origins with her gaze turned to the present: a modern, intimate and convivial bistro, where taste and simplicity meet in agenuine and informal atmosphere.
The cuisine is also a veno hymn to sharing: dishes designed to be enjoyed together. Two sections: “The taste, first of all” is a real Tribute to fresh homemade pastafor a journey between authentic flavors and surprising combinations and includes the “Sunday” homemade tagliolini with guinea fowl, thyme and lemon ragù (16 euros), homemade noodles with jacitian sausage ragù Marco d’Oggiono (15), potato gnocchi with genius ragout of polypetti, lemon and basil oil (17), the spring ravioli. Stuffed of beans, pecorino and mint, lemon butter and saffron, aromatic crumble (16) and saffron risotto with truffle butter, veal and black truffle bottom (22), a dish also present in the menu of Borgia Milano and available only for dinner. The second section, “pleasure, shared”, includes appetizers and Perfect seconds To be placed at the center of the table and encourage the sociability of the act of eating. So here is the Piedmontese tradition refreshed of the Vitello Magatello at the pink point, tuna sauce, veal bottom and capers powder (20 euros), very Milan fried Mondeghili with sweet and sour red and Valerian pepper cream (15 euros, only for dinner), the game of the contrasts of the Piedmontese Fassona tartare with nailed and bignè of Parmigiano (18). Fried courgettes stuffed with mozzarella, cantabric anchovies and agro -olce alle tomato mayonnaise (14 euros, only for dinner), chickpea hummus with blowing quinoa, rocket and holy oil designed for the “veg” audience (14), the Milanese veal with the shallot in the shallot (26) and the naive breast with Albese sauce, sweet and sour, Taggiasca olives and Parmesan (22).
