Once upon a time it was all sea here. The Biasin family, owners of the Cà Rovere company in the Berici Hills, in the province of Vicenza, can truly say this. The roots of their vines penetrate a stony land, fishing for their nourishment from what, 100 million years ago, was the bottom of a tropical sea. A characteristic that is not only a beautiful story, but contributes to giving the wines that are produced a pleasant savory and mineral trail.

Ca’ Rovere is a small 30-hectare company that produces around 35 thousand bottles a year. Founded in the 1980s by Bruno Biasin and today managed by the entire family (Bruno was joined by his children Ugo, Sisto and Alessia, today the third generation composed of Matteo, Marco and Marcella is in action), it specializes in classic method sparkling wines of excellent quality in a land that does not have a deep tradition in the field. But the classicism of Chardonnay and the almond note provided by the native Garganega give the wine a fresh, balanced and very personal aroma in every single label.

Here are the labels. There are seven bubbles, all vintage. The Extra Brut M 2021 is a pure Garganega that ages for 24 months on the yeasts and is acidic, fresh, slightly citrine on the nose and nervous and snapping in the mouth; ideal for aperitifs. The Brut Nature 2018 is a cuvée of Garganega and Chardonnay with 48 months on the yeasts and has olfactory notes of field, ripe white fruit, citrus fruits while the flavor and minerality return in the mouth; ideal for an aperitif or with a herb omelette. The Brut Blanc de Blancs 2019 is a pure Chardonnay that ages for 36 months on the yeasts and has notes of citrus, orange blossom and Mediterranean scrub on the nose and is characterized by its solemn pace in the mouth; it goes well with fish, such as – to stay local – Vicenza-style cod. The 2019 Brut is a vintage fruit of a cuvée of Garganega and Chardonnay that ages for 36 months on the yeasts and has ripe summer fruit and a hint of toasting on the nose and is lively and long in the mouth, with a pleasantly bitter finish. The 2019 Brut Rosé is a cuvée in which, in addition to Garganega and Chardonnay, Pinot Noir also appears, which provides a beautiful coppery color tending towards old pink; on the nose it has hints of berries, toasted dried fruit and a pleasant mineral note, while in the mouth it is fresh and elegant. The 2018 Demi-Sec comes from Garganega and Chardonnay grapes that spend 48 months on the yeasts and has a complex nose of tropical fruit, pastry, aromatic herbs and a flavorful mouth that successfully supports the sweetness; it lends itself to accompanying dry desserts, tarts, but also not too savory cheeses. Finally, the absolute champion, the Cuvée del Fondatore from Garganega and Chardonnay grapes with 120 months of maturation on the yeasts; the 2013 vintage is great from all points of view, green and at the same time toasted on the nose and tasty and muscular in the mouth; perfect to pair with fish dishes, including sauced ones, tempura and medium-aged cheeses.

The company also produces a line of still wines dedicated to Sisto Biasin. They include Sisto Bianco, a blend of Garganega and Chardonnay; the Sisto Rosso from Merlot and Cabernet Sauvignon grapes; and the passito Profumo di Sole from Garganega grapes that dry for six months and then spend two years in barrique.

The production philosophy of Cà Rovere is based on continuous innovation and sustainability, pursued through thoughtful viticulture which consists of a set of low-impact agronomic practices, implemented with the utmost

respect for the environment, without the use of synthetic chemistry. Cà Rovere also offers various experiences in the cellar: tastings, dinners in the vineyard, show cooking, aperitifs on the terrace, bike tours, company meetings and private events.
