There are brands that, when they unite, trigger that moment of lighting, as a stroke of genius that transforms the banal into something almost. And this is precisely what happens when the destinies of Visionnaire are crossing, flagship of luxury furnishings, and lymph, a Plant Based restaurant founded by Edoardo Valsecchi in 2021 and with a restaurant in via Borgognona in Milan.

There is no mention of a simple restaurant but of an experience that challenges the laws of physics, as if the design had taken the cuisine by the kitchen and guided it towards Agarthi, the legendary underground kingdom of beauty and light. And the journey to Agarthi is the inspiration of sap by Visionnaire, a concept that combines natural materials such as travertine and Quarzite Emerald Light, with surfaces in Mocha Mousse (Pantone of the year, understood?) Which whisper elegance as if we were stressing a corner of paradise.

Entering the showroom in Piazza Cavour 3 in Milan, you immediately find yourself in an environment that looks like a temple of aesthetics, where even the 18 -meter bar counter (if it is not a record that is not missing) and worked glass tables are not only “functional” but create an atmosphere that invites the connection, deep breath and reflection. It is a bit as if we entered an intimate refuge, a sanctuary of good life that celebrates the art of living together and enjoying beauty, be it in the form of furnishings or dishes.

And the cuisine? Linfa from Visionnaire shows that you can be ethical and at the same time super gourmet. It is a bit like finding a balance between yoga and pizza, between mindfulness and pasta: an art that seems impossible, but that lymph almost provocatively realizes. The cacio and pepper at the anacardi would also give the most traditionalist of the Romans while the vegan cutlet makes the best fried chicken of all time, net of the fences erected by the food tribes. Ah, and let’s not forget Shitake’s ragù, a dish that makes you think that perhaps, after all, meat is not even so necessary. And then there is also the artisan pizza, leavened for 48 hours with high hydration flours.

For sushi lovers, however, Linfa performs an operation worthy of a laboratory experiment: the sushi plant-based and gluten-free sushi. Tuna and salmon? No longer, thanks, but a surprising recreation based on pea proteins that could make you forget raw fish once and for all. And to make everything even more captivating there is a wine list, also rigorously vegan and natural, which accompanies you on a journey that starts from the Italian lands, passing through France, without forgetting a good glass of champagne, because luxury every now and then is a necessity.

In short, here we are from the parts of the philosophy of life rather than in the territory of pure nourishment, an act of love for health, the environment and our future. And to those who think that eating well cannot also be an act of responsibility, here the lymph responds with a selection of ingredients from vertical agriculture, such as that of Planet Farm, and by suppliers that respect very high standards of sustainability. It is no coincidence that Visionnaire has been defined as a benefit company since 2021 and undertakes to operate in compliance with the environment and people, through responsible, transparent and aware practices. Linfa from Visionnaire arises as a perfect example of how luxury and sustainability can coexist, how beauty can rhyme with responsibility. A sort of silent revolution: a cuisine that does not need to shout to get noticed, but that has the strength to transform every dinner into an act of care for our body, our spirit and our planet.
