It seems Max Mariola’s adventure in Milanese catering didn’t last long. The Roman chef and creator has decided to move to Bali in Indonesia, where he is starting a new entrepreneurial project: a resort of private villas that can be purchased with a “timed” formula, renewable for 27 years.
Open and closed premises
In the space of a year and a half, between 2024 and 2025, Mariola had opened three restaurants in Milan that immediately became “cult” for enthusiasts. The first, the Max Mariola Restaurant, in via San Marco (Brera area) in place of a supermarket, inaugurated on 24 January 2024, is still open. The second, the Bistrot by Max Mariola, in Corso Garibaldi, was opened in March 2025 and closed in April 2026. The third, Osteria da Fiorella, in Largo Corsia dei Servi, opened in June 2025, was closed in mid-2026 and the premises have now been “absorbed” by nearby Sorbillo. Evidently the results in economic terms have not paid off particularly.
The resort and the biofarm
Mariola, therefore, continues to preside over Milan with only one restaurant, of the three that he had opened in the blink of an eye. He sold the other two. The goal, as he himself explained, is not just to create the luxury resort. Alongside, there is the project of a tropical “biofarm”, to cultivate the fields and prevent fruit and vegetables from arriving on the island he chose from the mainland, as happens now.
